Spice Bistro goes from failing health inspection to obtaining near perfect score

DEKALB COUNTY, Ga. — A DeKalb County restaurant went from a failing health inspection score to a near-perfect score in 24 hours. A consultant that the owner of Spice Bistro brought in a month ago talked to Channel 2"s Carol Sbarge about changes she's made in how the kitchen operates.

She explained to Sbarge how the restaurant went from a score of 44 to 97 in a day. Spice Bistro, which opened about a year ago on Buford Highway, serves Caribbean, African and Southern food plus Cajun food on Fridays.

When the restaurant got the failing score on Aug. 30th, violations included heavy mold on peppers, blueberries, mango and salad mix and raw ground beef stored next to and over ready-to-eat foods. Another violation included food past its expiration date, including buttermilk with a January expiration date.
 
The consultant and manager, Nefertiti Yungia, says she wants to assure everyone that no dated food items were being used in the preparation of food. She says all the violations were corrected immediately. She says they are happy they got a 97 from the health inspector on Aug. 31st.

Yungia says the restaurant put together a remediation plan with the health department. She says all food coming in now is being tagged. She added workers have been trained to toss any dated food out even if it wasn't going to be used. She said they had previous systems in place to do inventory weekly. She says now workers have been trained to do that daily.

Yungia says she appreciates the inspection process and says the health department will help in the future with ongoingtraining for employees.
