Peaches In Red Wine

Makes 4 servingsUse a red wine with a fruity flavor and aroma, such as Dolcetto, for this dessert, which is elegant, light, and the perfect ending for a substantial Italian meal. Accompany with crisp, little Amaretti macaroon cookies.
½ cup fruity Italian red wine
1 teaspoon granulated sugar
2 large ripe peaches, peeled and thickly sliced
½ cup ricotta cheese
1 tablespoon powdered sugar
½ teaspoon pure vanilla extract (see Tip)
Sprigs of fresh mint for garnishCombine the red wine and sugar in a medium bowl; stir until the sugar is dissolved. Add the peaches and stir gently.
Meanwhile, stir together the ricotta cheese, powdered sugar, and vanilla in a small bowl.To serve, spoon the peaches and wine into dessert bowls. Add dollops of the ricotta mixture and garnish with mint sprigs.
